Kale salad

This salad was so delicious
even my five year old 
was willing to try it.
 Her favorite ingredients: avocado, cucumber and cherry tomatoes.
I ate the rest (kale, celery, spinach).

Ingredients for the dressing included:
chopped parsley, lemon juice, nutritional yeast, scallions, cayenne pepper, olive oil
and Himalayan sea salt.



The salad was inspired by a book I'm currently reading,
It focuses on eating lots of veggies and fruits.
It's a slow transition, but I definitely feel good!
 I could eat this salad every day for lunch.
Yum!

Un Año Nuevo


A New Year. 
Only asking for good health.
Everything else is work in process.
So far, have been transitioning
into a full-time Mommy.
You would think it's easier 
second time time around right?
but sleepless nights are still
challenging. 
After 6 weeks, slowly getting accustomed.
Emilia is a wonderful baby and Beli is a proud big sister.





I'm looking forward to a year of personal growth.

July in Croatia~ back home for two weeks










This last photo sums up my two weeks in Croatia this past summer: Total relaxation.

It has been almost two years since we moved back to the States, yet I felt right at home! 
Hopefully I can get back to regular blogging in a couple of  weeks and can share more about our summer. Beli had a blast! And I have more, more pictures to share.

Pink Flowers and planning a trip to Croatia


A few days ago we invited our good friends to visit us for an afternoon lunch.  She brought these beautiful flowers from her garden!


 It was a wonderful day as we reminisced about their previous trip to Croatia. 




And speaking of Croatia, next week Beli and I will be flying overseas to visit Baka and Dida. It's been over 2 years since we moved back from Croatia and we are due for a visit!


 Beli doesn't remember much about her life overseas. Then again she was only 2 1/2 years old.

I on the other hand, am  overwhelmed with happiness to return to my 
old 'hometown'. 


Everything is going well with my pregnancy and the doctor has cleared me for flying. Only an 18 1/2 hour trip. But  it will all be worth it when we land in Split and I see the crystal blue sea. Ah I really need a vacation! Heheee

Baby tomato plants in egg shells

Looks like winter weather is finally over ( I hope) and 
today should be very warm and  the perfect day to work on my balcony garden. 


A few weeks ago I planted my tomato seeds in empty egg shells and 
I'm still amazed at how fast they grow.


Isn't mother nature amazing?



In addition to tomato plants, I would also like to have basil, oregano, jalapenos and lots of flowers,
I just think being in touch with nature makes you happier, if that makes sense?

Oh, and while we are on the topic of baby tomato plants,
I am too growing a baby.
Beli is super excited about being a Big Sister!
Actually we are all very happy about this new family
member that will be joining us this Fall.
Another reason for being Thankful!

Birthday celebration and lots of cake~


My precious Beli turns 5!
She is in such a hurry to grow up that if you ask her how old she is, 
her reply is, " I'm seven!"


But to us she is still our precious little girl.


We had two celebrations. Last month we traveled to Iowa to spend a weekend with my family.
Beli was confused if it was really her birthday.
Then we celebrated again this past Sunday.


I came across this carrot cheesecake recipe while reading my friend's blog, Loveaffair
and I thought it would be perfect for Beli's birthday.
To my dismay, Beli didn't like the carrot cheesecake, so hubby went and purchased a small cake from the grocery store.
