Three bean salad with basil- lemon vinaigrette


Lunch today was inspired by a blog I came across called Always order dessert. You should check out other wonderful recipes Alejandra has created. Next on my list is her rum cake (made from scratch!)

The recipe called for pesto but I didn't have any pine nuts in the pantry so instead I prepared the salad a little different.

I was short on time (watching three kiddos is no easy task) so I literally threw all the ingredients together and the end result was a gigantic salad!

It's a very filling meal. I really liked the idea of using cranberries but I'm sure you can use other dry fruits.

Ingredients:
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can garbanzo beans, rinsed and drained
1/4 cup extra virgin olive oil
1 Tablespoon minced fresh basil
1 teaspoon lemon zest
1 Tablespoon fresh squeezed lemon juice
a few spritz of balsamic vinaigrette
1/2 cup dry cranberries

And here comes the easy part!


 Mix all the ingredients and serve a desired quantity over a bed of mixed greens. I also had some leftover corn so for color purposes ( I like my food to be colorful!) I  added some to my salad. And of course hot salsa. So feel free to add as much and as little as you want.

Currently working on my grocery shopping so I can bake hubby home-made flan, a favorite of his.
 We will finally be reunited after 3 months! His flight is from Split-Zagreb-London-Chicago. My brother-in-law will be driving 3 hours to pick him up. We will stay at home as his flight is late in the evening.
For the past few days Beli asks me, "Mami, ahorita viene Daddy?" Mommy now Daddy comes?" 
She is also awaiting the mickey and daisy toys she asked him to bring her from Croatia.

  1. Aww..so happy that your husband is arriving soon. I bet you both missed him so much. I love how rich this salad looks and what a great idea to use cranberries as an extra. They must give such a lovely taste to it. Thanks,sweetie for the recipe. Im going to try it! Happy weekend

  5. hi there in the USA (in stead of HR).
    if you like, a couple of real simple tricks to ad some taste, colour and wow to a salad:
    1. some strawberries, and slice them into the salade (it's slightly acidious, fruity and combines excellent in a salade).
    2. a more earthy variety you get by adding some fresh sliced mushrooms (those simple white ones).
    NEVER wash them, but rub them clean with a cloth, than slice hem into the salade.\
    3. no pine nuts, no problem (if for a salade)
    roast some sliced almonds and add them at the very last minute (nutty and crunch).
    We're still in Holland, papers papers papers (for permit), and besides, they had 20 centimeters of snow in "sunny" Croatia, so let them finish that first before we start driving.

  7. This looks yuuuuummmy!! How cute your daughter is... You're such a sweet wife to make his favorite dish for your hubby and I could feel your being anxious to see your husband. That must have been an exciting moment!!
